Sizzling skewers

Recipe method

Soak 4-6 wooden skewers in water for at least an hour (alternatively use metal skewers). Thread chunks of frankfurters and vegetables onto the skewers and set aside.

Mix together the marinade ingredients and brush over the skewers then leave for 10 minutes for the flavours to develop.

Grill or barbecue for 5-10 minutes, turning a couple of times and basting with any remaining marinade.

Serve on a bed of freshly dressed salad leaves.

  • 3 medium red onions, cut into wedges

  • 1 yellow pepper, deseeded and cut into large chunks

  • 6tbsp tomato chutney
  • juice of half a lime
  • freshly ground black pepper
  • freshly dressed salad leaves, to serve
